So what does harden actually do? Is it like a hidden hp that regenerates while you're casting?

I think it is more likely a damage reduction buff for any damage source which increases as you cast longer

Yes, it's "ice armor."  Just prevents physical things from getting to you to damage you (it increases as you fire).

I don't actually remember if it also resists magic damage, but it shouldn't!
